Friends! I have a fun new post for you today. Last weekend I went to Cleveland to visit my bestie, Amira, for the Beyonce and Jay-Z On the Run tour. Like all of our adventures, it was full of memories I will treasure forever.
As soon as I arrived in town, Amira surprised me with a care package filled with all kinds of goodies including a batch of gluten-free flour that she made. She also baked me a vegan gluten-free cake!! Not only was it gluten-free, it was specifically Carlyn-friendly which means it was free of all the foods I avoid as a result of my (many) food sensitivities. And the best part… it was DELICIOUS. I rarely have baked goods these days, so when I do, it’s an extra special treat. I really don’t know how Amira does it. Despite substitutions, all I could taste was the richest, most decadent cake.

My best friend Carlyn (“Car”) came into town for a couple of days, so naturally, I had to bake a cake to celebrate. 👯♀️💕 Car went gluten-free about a year ago and has been on a journey to remove inflammatory triggers from her diet to help improve her overall health and gain a better understanding of how nutrition can impact and have an effect on scoliosis. It wasn’t an easy road, but a year later, she’s in an amazing place (and as always…she’s an amazing human being). You should follow her and check out her progress on her blog @thecurvytruth.
Wanting to encourage and support her new lifestyle, I set out to make a delicious dessert that fit within her nutritional restrictions so she could enjoy it without having to worry about any adverse reactions. The base recipe is @minimalistbaker one bowl chocolate cake with several modifications to fit Car’s dietary restrictions. I also made my own gluten-free flour mixture as almost all of the packaged ones (and most recipes you’ll find online) contain some form of tapioca starch. I have to admit… I’m really happy with the way this one turned out. The result was a cake that is delightfully fluffy and light, paired with a frosting that is perfectly rich and dense and chocolatey. 🤤 It’s pretty much everything you’d want out of a chocolate cake, and to be honest…while eating it, I totally forgot that it was vegan AND gluten-free! Yes, it’s that good. 💯 I’m definitely going to have to check out more of @minimalistbaker‘s recipes in the future 😍

This cake does look really amazing! It’s the kind of option you wish you saw at bakeries around the country – where you pick it not because it’s necessarily vegan or gluten free, but because it looks amazing! I can easily imagine asking for a piece before I was “gluten avoidant” ;)
